Healthy & Flavorful Heart of Palm Salad – Perfect Side Dish!
INGREDIENTS
- 4 oz (114 g) arugula
- 1 can Palmsticcio from Jego (8 oz)
- 1/4 cup finely sliced onion
- 2 hass avocados
- 4 oz (114 g) feta cheese
- 1/3 cup dried cranberries
🍋 Lemon Vinaigrette:
- 1 large lemon
- 2 tbsp olive oil
- 4 tbsp honey
INSTRUCTIONS
- First, let’s prep our onions. Slice them super thin and soak them in ice water for 7 minutes—it takes away that bite and keeps them nice and crunchy.
- In a small bowl, whisk together the juice of 1 large lemon, 2 tablespoons of olive oil, and 4 tablespoons of honey to make the vinaigrette. Set aside.
- In a salad bowl, layer the arugula, diced avocado, drained and sliced Palmsticcio hearts of palm, crumbled feta cheese, and dried cranberries.
- Top with the vinaigrette and toss gently to coat. Serve immediately and enjoy this fresh and delicious salad!
