Healthy & Flavorful Heart of Palm Salad – Perfect Side Dish!

INGREDIENTS

  • 4 oz (114 g) arugula
  • 1 can Palmsticcio from Jego (8 oz)
  • 1/4 cup finely sliced onion
  • 2 hass avocados
  • 4 oz (114 g) feta cheese
  • 1/3 cup dried cranberries

🍋 Lemon Vinaigrette:

  • 1 large lemon
  • 2 tbsp olive oil
  • 4 tbsp honey

INSTRUCTIONS

  1. First, let’s prep our onions. Slice them super thin and soak them in ice water for 7 minutes—it takes away that bite and keeps them nice and crunchy.
  2. In a small bowl, whisk together the juice of 1 large lemon, 2 tablespoons of olive oil, and 4 tablespoons of honey to make the vinaigrette. Set aside.  
  3. In a salad bowl, layer the arugula, diced avocado, drained and sliced Palmsticcio hearts of palm, crumbled feta cheese, and dried cranberries.  
  4. Top with the vinaigrette and toss gently to coat. Serve immediately and enjoy this fresh and delicious salad!
