Tropical Fruit Mix Cupcake
INGREDIENTS
- 1 can Tropical Fruit Mix.(Drained and reserve the syrup)
- 10 tsp butter, softened
- ¾ cup white sugar
- 3 egg
- ½ tsp vanilla
- 1 ¾ cups flour, sifted
- 2 tsp baking powder
INSTRUCTIONS
With a mixer, cream together butter and sugar until light, about5 min. Add eggs one at a time, until fully incorporated. Add vanilla.Open the can of Tropical Fruit Mix, drain the can and save the liquid Stir in flour and baking powder until batter is uniform with and no flour remain.
Add ¼ cup of syrup Tropical Fruit Mix. Spoons batter into a muffin tin lined with cupcakes liners. Top each cup cakes with chunks of Tropical Fruit Mix.
Bake in preheated 325F oven for 30 min or until toothpick inserted into cupcake come out clean
