Irresistible Shrimp Salad Delight

INGREDIENTS

  • 1 medium red bell pepper
  • 1 tbsp olive oil
  • 25 shrimp (peeled and cleaned)
  • 1 tsp crushed garlic

Dressing:

  • 4 tbsp olive oil
  • 4 tbsp wine vinegar
  • 1 garlic clove, crushed
  • 1 tsp Dijon mustard
  • 2 tbsp honey
  • Juice of ½ lemon
  • ½ tsp oregano
  • Salt to taste

Salad:

  • 3 cups arugula
  • 1 can hearts of palm (I love the Spalmghetti from @jegolife)
  • 1 cup cherry tomatoes
  • 1 cup canned corn
  • 1 Hass avocado
  • 1 cup cucumber
  • 1 cup feta cheese
  • Fresh dill for garnish

INSTRUCTIONS

1. Sauté the red bell peppers in olive oil over medium-high heat until golden, then set aside.

2. In the same pan, sauté the shrimp in olive oil for 1 minute on each side. Add the garlic and cook for another minute. Turn off the heat and set aside.

3. Mix all the dressing ingredients together in a bowl.

4. Assemble your salad by layering the ingredients in this order: arugula, hearts of palm, cherry tomatoes, canned corn, sautéed bell peppers, avocado, shrimp, cucumber, and feta cheese.

5. Drizzle the dressing over the salad and garnish with fresh dill.
