INGREDIENTS
- Jego Family-Size Tuna, 500g
- 4 tbsp Butter
- 6 tbsp All-Purpose Flour
- 500 ml Milk
- 200g Onion, diced
- 1 large Garlic Clove, minced
- Salt and Pepper, to taste
- ¼ cup Fresh Parsley, chopped
For Coating:
- All-Purpose Flour
- Panko Breadcrumbs
- 2 Eggs, beaten
- Oil for frying
INSTRUCTIONS
Prepare the Filling:
- Melt the butter in a skillet over medium heat.
- Add the diced onion and minced garlic, and cook until soft and translucent.
- Stir in the flour and cook for a few minutes, stirring constantly, to make a roux.
- Gradually pour in the milk while stirring to dissolve any lumps.
- Cook until the mixture thickens into a creamy béchamel sauce.
- Add the flaked Jego tuna and chopped parsley to the béchamel.
- Season with salt and pepper to taste, cook for another minute, then transfer the mixture to a bowl. Cover it with plastic wrap pressed directly on the surface and refrigerate for at least 1 hour (or overnight if preferred).
Bread and Fry:
- Shape the tuna and béchamel mixture into croquettes.
- Coat each croquette in flour, then dip it in beaten egg, and finally roll it in Panko breadcrumbs, ensuring full coverage.
- Heat plenty of oil in a deep skillet or fryer to 350°F (175°C). (For a healthier option, you can use avocado oil.)
- Fry the croquettes in batches until golden and crispy, about 2–3 minutes per side or 2–3 minutes total if using a deep fryer.
- Place the croquettes on paper towels to absorb excess oil and enjoy your delicious tuna croquettes!
